Salad "Khazar"
Salads are great for any type of meal, whether a light lunch or as a filling main course at dinner.
Salad Khazar can even be one of the courses in their own right. Salads bring balance to the meal by providing a refreshing accompaniment to just about anything. A light salad brings great balance to a heavier dish. In Azerbaijan cuisine there are several types of salads which have marvelous taste.

Preparation time: 20-25 min
Cooking time: 30 min
Serves: 4-6

Ingredients
  • 350 g/14 oz sturgeon
  • 50 g/2 oz fresh-salted salmon
  • 25 g/1 oz caviar
  • 150 g/6 oz potatoes
  • 200 g/8 oz fresh cucumbers
  • 50 g/2 oz tarragon
  • 150 g/6 oz sour cream
  • 50 g/2 oz green lettuce
  • 1 lemon
  • salt & pepper
Preparation
  • Boil fish, remove skin and gristles. Dress cut vegetables with sour cream, pile on the plate and decorate with long fish slices, green lettuce, tarragon and coiled salmon slices stuffed with soft caviar.
