Khalva from wheat starch
Khalva refers to many types of dense, sweet confections, served across the Middle East, West Asia, Central Asia.
Khalva from wheat starch is a traditional sweet, prepared in Azerbaijan, made by sugar powder and with homemade wheat starch. Saffron infusion gives unique taste to this me.

Preparation time: 10 min
Cooking time: 30 min
Serves: 4-5

Ingredients
  • 200 g/8 oz melted butter
  • 175 g/7 oz sugar powder
  • 125 g/5 oz homemade wheat starch
  • a few threads of saffron
Preparation
  • Dilute wheat starch in water to obtain 200 ml of the quantity. Heat up butter and add sugar syrup made from 100 gr of sugar as 1:1. Dilute saffron in the syrup. Add the starch solution gradually to the hot butter-syrup mixture at constant stirring. Boil slowly and agitate for 8-10 minutes. Cool down the ready khalva and strew with sugar powder.
