Azerbaijan fruits pastry

Azerbaijan fruits pastry has special taste with saffron infusion.
Azerbaijan cuisine is rich with pastries and deserts. You can eat pastries with tea and every time you want.

Preparation time: 60 min
Cooking time: 20 min
Serves: 7-8

Ingredients
  • 5 glasses top grade flour
  • 2 glasses granulated sugar
  • 4 eggs
  • 200 g/8 oz sour cream
  • 200 g/8 oz butter
  • 1 tsp soda
  • To decorate the top:
  • 10 buds clove
  • a few threads of saffron
  • 1 medium-size beet
  • 100 g/4 oz granulated sugar
Preparation
  • Whip eggs with granulated sugar, add butter arid mix thoroughly. Mix soda with sour cream arid, add to the whipped mass. Add flour by small portions and mix the mass. Shape round and oval pieces of varying size and bake for 10-12 minutes at a temperature of 190- 210 'C.
  • Pair the hot pieces by joining them with whipped egg white.
  • Colour the pastry with saffron (peaches, apricot) infusion and beet (plum, peach) juice and roll in granulated sugar. Form the sepals of these dough pears by sticking a clove bud to each pear before baking. Colour one side of the pear with saffron infusion and the other with beet juice and roll in granulated sugar.
